As for La Rábita, whereas it was the hottest spot on the Costa Tropical in mid-July, on Monday it will only have a blissful night temperature of 18º.

Well said. Yes, this year is hotter than recent previous years, but 41C in Salobreno at
11am is a joke. The weather channels vary so much. I trust my old car which clocked 33 celcius
this afternoon in Almunecar and the highest recording ever was 43 celcius about 12 years ago when
driving through Malaga.
If you watch the reported temperature tomorrow at 11am it will be about 30 degrees and nowhere near the forecast of 41C. Same thing happened last time.
A hot air mass coming down the valley would show on the temperature chart for Velez and you can see this peaks 2 hours later at 34C.
AEMET has better temperature data.
Andrew: yes, they are from https://en.eltiempo.es. Looking as you say, at the hourly forecasts, you will see that the temperature at 00.01h Thursday is still 27ºC. Normally the coolest part of the morning/night is around 06.00h, always, which is when the land has given up most of its accumulated heat, then with dawn temperatures quickly rise:
07.00h = 24°C
08.00h = 26ºC
09.00h = 30°C
10.00h = 37°C
11.00h = 41°C
Between 07.00h and 09.00h the wind’s coming in from inland, pushing temperatures up, but then it begins to veer until at 12.00 its coming in front sea, which is cooler and when the temperature begins to drop from 41ºC to 40ºC. During the rest of the day the wind continues from the South, South West and South East, but always from the sea which has a cooling affect and so the temperatures continue to drop.
The bit difference between Almuñécar and Salobreña is that the former is in the Río Verde Valley which is relatively steep and short so heat coming from inland doesn’t affect it so much. Salobreña is in the Guadalfeo Valley, which goes much further inland so the accumulated inland temperatures bleed down it. It also explains why Salobreña nights are cooler than Almuñécar ones – the cooler Sierra Nevada airs flow down at night.
Anyway, I am not a meteorological experts, far from it, but the two valleys are very, very different.
Lastly, water takes longer to heat and longer to cool than landmass; that’s to say you always get offshore breezes at night and inshore during the day: during the day, water slowly accumulate heat but the land does so quickly so that air is drawn off the sea to replace the air rising off the land. At night, the cooling process is slower over the sea so the air is drawn off the land to replace air still rising off the sea.
If these figures are from eltiempo.es they are totally wrong. They must have a problem with their predictions because they have consistently over-estimated the temperature in Salobreña. You can see it in the difference in the hourly and daily forecast as the day passes. For example 41C at 11am is virtually impossible.
