Fishy Cheese

Who doesn’t like cheese? Wallace of Wallace & Grommet fame certainly does but sometimes it’s not really cheese that you are buying.

We’re referring to the highly processed cheese that comes ready sliced for sandwiches or hamburgers, for example. Some not only have questionable nutritional value, but also have little that can be described as cheese left in them after such intense processing.

The Organización de Consumidores y Usuarios asks shoppers to pay special attention when purchasing cheese in supermarkets. There are certain brands of cheese slices that can even be prejudicial to your health because they have gone through such an intense processing sequence.

When you process cheese that much you virtually eliminate what is really cheese from the product. But it’s not only sliced cheese but also ‘Cheese specially for grilling;’ i.e., for topping and melting under the grill.

There are also some products marked, ‘Mozzarella-flavoured cheese,’ or ‘Cheddar type for making cheese sauce.’

None of the above specifically mention the word cheese in the ingredients, says the OCU.

So, to identify what is real cheese and what is not, you should read the ingredients list. It should include pasteurised milk, fermented dairy products and salt and nothing more. It’s OK if you find calcium chloride and lysozyme as they are natural preservatives.

As you will be looking in a Spanish supermarket, you’re looking for: leche pasteurizada, cuajo, fermentos lácticos, sal, cloruro cálcico and lisozima

The rule of thumb is: the fewer ingredients; the better.
